This batch has been aged well beyond its usual 4 to 5 months and is available in 1kg quarter wheel portions only. Raw Tom is normally released young, fresh and lively, with a gentle acidity, yoghurt like tang, and subtle barnyard and mushroom notes near the rind. This particular batch caught our attention early, showing unusual depth and promise at 4 months, so we decided to let it
